Who is Collie?
Phil Spector
Phil started working behind the bar here in NZ, but soon found himself abroad in both Australia and the UK, while working in venues ranked on The World’s 50 Best list. It was there that his passion for hospitality grew, as well as a fine attention to detail. Now back home, Phil is eager to give back to the industry through the knowledge he has gathered and support for the next generation.
Chad Mills
Chad has spent a large part of the last 20 years working in bars and restaurants. Curious about flavour and the dynamics of interaction, his priorities to create a warm and welcoming environment for people to relax and appreciate both. Growing up in small town New Zealand he is happiest when spending time with friends and family, always ready for the next adventure.

In the search for longevity, we aim to voice and showcase the need for changing attitudes towards issues such as gender equality, environmental neglect, drinking cultures in New Zealand and the harmful health / lifestyle conditions most commonly attributed to working in hospitality.
Innovate
Creating “exciting and considered” drinks - building on a foundation of understanding what fundamentally makes for a better cocktail. Moving forward with the help of new techniques, ideologies and teaching methods in order to showcase ‘modern’ cocktails amidst a landscape of growing challenges - both cultural and environmental.
Inspire
A display of land and flavour. Told through the stories behind local products, producers and the places they come from. We aim to bridge the disconnect we have between cultivators and consumers.

Creating “exciting and considered” drinks - building on a foundation of understanding what fundamentally makes for a better cocktail
The idea is simple. To create clean, exciting flavours, while upholding the integrity of the produce we work with.
To help us explore this, we employ an array of tools that normally wouldn’t be found in a standard bar or kitchen. From spinning liquid in a high speed centrifuge to redistilling solvents under vacuum pressure. We use these assets not only to adjust flavour, but to alter clarity, texture and aroma in ways to present a unique experience.
